Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon Italian seasoning (optional)

For the Filling:

  • 8 thin asparagus spears (trimmed to fit chicken breasts)
  • 4 slices of cheese (such as mozzarella, provolone, or Swiss)
  • Optional: 4 slices of prosciutto or ham (for added flavor)

For the Topping:

  • 1 tablespoon olive oil or melted butter
  • Fresh parsley, chopped (for garnish)

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.

2. Prepare the Chicken:

  1. Using a sharp knife, carefully slice a horizontal pocket into the thickest part of each chicken breast, being careful not to cut all the way through. Season the chicken breasts generously with salt, pepper, garlic powder, and Italian seasoning on both sides.

3. Stuff the Chicken:

  1. Place one slice of cheese inside each chicken breast pocket. If using prosciutto or ham, layer it over the cheese. Insert two asparagus spears into each chicken breast, trimming them if necessary to fit snugly.

4. Secure and Season:

  1. Use toothpicks or kitchen twine to secure the openings of the chicken breasts to keep the filling inside. Brush the outside of the chicken with olive oil or melted butter for a golden finish.

5. Bake the Chicken:

  1. Place the stuffed chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.

6. Garnish and Serve:

  1. Remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
  2. Serve hot alongside roasted potatoes, mashed potatoes, or a side of steamed vegetables for a complete and elegant meal.
