Ingredients
For the Cake Balls:
- 1 box strawberry cake mix (plus ingredients listed on the box: eggs, oil, water)
- ½ cup champagne (or sparkling wine), divided
- 1 container (8 oz) cream cheese frosting (optional: homemade strawberry frosting)
For Coating:
- 12 oz white chocolate or dark chocolate melting wafers
- Sprinkles, edible glitter, or crushed freeze-dried strawberries for decoration
Instructions
Prepare the Cake: Preheat your oven according to the cake mix instructions. Prepare the cake batter using the ingredients listed on the box, substituting ½ cup of champagne for water. Bake the cake in a 9×13-inch pan as directed. Let it cool completely.
Crumble the Cake: Once cooled, crumble the cake into fine crumbs using your hands or a food processor. Mix in ¼ cup of champagne and the cream cheese frosting until the mixture holds together when squeezed. If needed, add a little more champagne, one teaspoon at a time, to achieve the right consistency.
Form the Balls: Roll the cake mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill the balls in the refrigerator for at least 30 minutes to firm up.
Melt the Chocolate: Melt the white or dark chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
Dip the Cake Balls: Dip each chilled cake ball into the melted chocolate, using a fork or dipping tool to coat evenly. Tap off excess chocolate and place the coated ball back on the parchment paper. Immediately decorate with sprinkles, edible glitter, or crushed freeze-dried strawberries before the chocolate sets.
Set and Serve: Allow the cake balls to set at room temperature or chill in the refrigerator until the chocolate hardens. Arrange them on a platter or in mini cupcake liners for an elegant presentation.
