Ingredients

Scale

For the Base:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the Cinnamon Swirl:

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

For the Topping:

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

Preheat and Prepare:

  1. Preheat your oven to 350°F (175°C) . Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment paper and set aside.

Make the Base:

  1. In a large mixing bowl, use a hand or stand mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  2. Beat in the eggs one at a time, followed by the vanilla extract, until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

Assemble the Bars:

  1. Press two-thirds of the dough evenly into the prepared baking pan to form the base layer.
  2. In a small bowl, mix together the ¼ cup granulated sugar and 1 tablespoon cinnamon for the swirl. Sprinkle this mixture evenly over the base layer.
  3. Drop small spoonfuls of the remaining dough over the cinnamon layer, gently spreading it as best as you can—it doesn’t have to be perfect!

Add the Topping:

  1. In another small bowl, combine the melted butter, 2 tablespoons granulated sugar, and 1 teaspoon cinnamon for the topping. Drizzle this mixture over the top of the bars and use a knife or toothpick to gently swirl it into the dough for a marbled effect.

Bake:

  1. Bake for 25-30 minutes , or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out mostly clean (a few crumbs are okay).

Cool and Slice:

  1. Allow the bars to cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  2. Cut into squares or rectangles and serve. Store leftovers in an airtight container at room temperature for up to 3 days.
