Ingredients

Scale

For the Filling:

  • 3 medium potatoes, peeled and diced
  • 2 tablespoons butter
  • ¼ cup milk (or cream for extra richness)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • Optional add-ins: cooked bacon bits, diced green chilies, sautéed onions, or black beans

For Assembly:

  • 6 large flour tortillas
  • Optional toppings: sour cream, salsa, guacamole, chopped green onions

Instructions

1. Cook the Potatoes:

  1. Place the diced potatoes in a pot of salted water and bring to a boil. Cook for 10-15 minutes, or until fork-tender. Drain the potatoes and return them to the pot.
  2. Mash the potatoes with butter, milk, salt, pepper, and garlic powder (if using) until smooth and creamy. Stir in half of the shredded cheese until melted and combined.

2. Prepare the Tortillas:

  1. Warm the tortillas in a dry skillet or microwave for 10-15 seconds to make them pliable.

3. Assemble the Burritos:

  1. Divide the cheesy mashed potato mixture evenly among the tortillas, placing it in the center of each.
  2. Sprinkle the remaining shredded cheese over the potatoes. Add optional ingredients like bacon bits, diced green chilies, or sautéed onions if desired.
  3. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito.

4. Optional: Toast the Burritos:

  1. For a crispy exterior, heat a skillet over medium heat and lightly toast the burritos on all sides until golden brown. Alternatively, wrap them in foil and bake at 375°F (190°C) for 10-15 minutes.

5. Serve and Enjoy:

  1. Serve the burritos hot with your choice of toppings like sour cream, salsa, guacamole, or chopped green onions.
  2. These burritos can also be wrapped individually in foil and stored in the fridge or freezer for a quick grab-and-go snack or meal prep option.
