Instructions

1. Sauté the Vegetables:

  1. Heat the butter or olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and carrots, cooking for 5-6 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.

2. Cook the Potatoes and Broccoli:

  1. Add the diced potatoes, broccoli florets, thyme, salt, and pepper to the pot. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.
