Ingredients

Scale

For the Spinach Filling:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • ¼ cup cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

For the Salmon:

  • 4 salmon fillets (68 oz each), skin-on or skinless
  • 2 tablespoons blackened seasoning (store-bought or homemade blend below)

Homemade Blackened Seasoning Blend (Optional):

  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For Serving:

  • Lemon wedges
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Spinach Filling:

  1. Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Add the fresh spinach (or frozen spinach) and sauté until wilted and excess moisture has evaporated (about 3-5 minutes).
  3. Remove from heat and let cool slightly. Stir in the cream cheese and Parmesan cheese until well combined. Season with salt and pepper to taste. Set aside.

2. Stuff the Salmon Fillets:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Using a sharp knife, carefully cut a horizontal pocket into the thickest part of each salmon fillet, being careful not to cut all the way through.
  3. Spoon the spinach filling evenly into the pockets of each salmon fillet.

3. Coat with Blackened Seasoning:

  1. Pat the stuffed salmon fillets dry with paper towels. Rub the blackened seasoning blend evenly over the top and sides of each fillet, pressing gently to adhere.

4. Bake the Salmon:

  1. Place the stuffed salmon fillets on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. For a crispier topping, broil for 1-2 minutes at the end of cooking.

5. Garnish and Serve:

  1. Transfer the salmon fillets to plates and garnish with fresh parsley and lemon wedges. Serve hot with your choice of sides like roasted asparagus, wild rice, or garlic mashed potatoes.
