Ingredients

  • 16 cloves garlic, unpeeled
  • 2 quarts (1.9 liters) water
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 3 whole cloves
  • 2 sage leaves, chopped (or ¼ teaspoon dried sage)
  • 2 sprigs fresh thyme (or ¼ teaspoon dried thyme)
  • 1 bay leaf
  • 4 sprigs parsley (or ½ teaspoon dried parsley)
  • 3 egg yolks
  • ¼ cup olive oil (not extra virgin)
  • Crusty bread for serving

Instructions

  1. Prepare the Garlic: Bring a pot of water to a boil. Add the unpeeled garlic cloves and blanch for about 30 seconds. Remove them and run under cold water to stop the cooking process. Peel the garlic cloves and set aside.
  2. Simmer the Soup: In a large pot, combine the peeled garlic, water, salt, pepper, cloves, sage, thyme, bay leaf, and parsley. Bring to a gentle boil and then reduce heat to low. Let it simmer for about 30 minutes.
  3. Make the Mayonnaise: While the soup simmers, whisk the egg yolks in a large bowl until thickened. Slowly add the olive oil, drop by drop, while whisking vigorously until it forms a mayonnaise-like consistency.
  4. Combine Broth and Mayonnaise: After 30 minutes of simmering, strain the broth through a fine mesh sieve into the bowl with the mayonnaise mixture. Whisk continuously to combine.
  5. Serve: Ladle the soup into bowls and serve hot with crusty bread on the side.
