This Caramelized Leek and Mushroom Gruyere Pasta is a comforting and flavorful dish that features sweet caramelized leeks, earthy mushrooms, and rich Gruyere cheese. It’s perfect for a cozy dinner and can be prepared in about 45 minutes.
Ingredients
- 2 tablespoons olive oil
- 3 tablespoons butter, divided
- 3 medium leeks, tops removed, cut in half and thinly sliced
- ½ teaspoon salt
- ½ teaspoon granulated sugar
- ⅓ cup sherry wine (or white wine)
- 8 ounces oyster mushrooms, sliced (or any preferred mushrooms)
- 4 garlic cloves, minced
- 2 sage leaves, chopped (optional)
- ¾ cup heavy cream
- 1 tablespoon balsamic vinegar
- 1 teaspoon lemon zest
- 1 lb fettuccine (or pasta of choice)
- 1 cup reserved pasta water
- ½ cup grated Gruyere cheese
- 1 teaspoon black pepper
- ¼ cup toasted pine nuts (for garnish)
Instructions
- Caramelize the Leeks:
- In a large sauté pan, heat the olive oil and 2 tablespoons of butter over medium heat. Add the sliced leeks, salt, and sugar. Cook for about 20 minutes, stirring occasionally, until the leeks are golden brown and caramelized. If the pan gets too dry, add a tablespoon or two of water.
- Deglaze with Wine:
- Add the sherry wine to the pan and cook until it has reduced slightly. Remove the leeks from the pan and set aside.
- Cook the Mushrooms:
- In the same pan, melt the remaining tablespoon of butter. Add the sliced mushrooms in an even layer. Cook without stirring for about 4 minutes until browned, then flip and cook for another 2-3 minutes. Season with salt and pepper.
- Add Garlic and Sage:
- Stir in the minced garlic and chopped sage (if using) and sauté for about 1 minute until fragrant.
- Make the Sauce:
- Return the caramelized leeks to the pan along with the heavy cream, balsamic vinegar, and lemon zest. Bring to a simmer and let it thicken for about 2-3 minutes. Season with additional salt and pepper to taste.
- Cook the Pasta:
- Meanwhile, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.
- Combine Pasta with Sauce:
- Add the cooked pasta to the sauce along with 1 cup of reserved pasta water and grated Gruyere cheese. Toss everything together until well combined and the cheese is melted.
- Serve:
- Portion into bowls and garnish with toasted pine nuts. Serve immediately.
