Ingredients
For the Soup:
- 1 lb boneless, skinless chicken breasts (about 2 medium)
- 1 cup uncooked wild rice blend (or wild rice mix)
- 4 cups chicken broth (low-sodium preferred)
- 1 cup water
- 1 medium onion, diced
- 3 medium carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
For the Creamy Finish:
- 1 cup heavy cream (or half-and-half for a lighter option)
- 2 tablespoons cornstarch mixed with 2 tablespoons water (slurry, for thickening)
Optional Garnish:
- Fresh parsley, chopped
- Crusty bread or crackers
Instructions
Assemble in the Crockpot:
- Place the chicken breasts at the bottom of the crockpot. Add the wild rice, chicken broth, water, diced onion, sliced carrots, sliced celery, minced garlic, thyme, parsley, salt, and black pepper. Stir gently to combine.
Cook:
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours , until the chicken is cooked through and the wild rice is tender.
Shred the Chicken:
- Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
Add Cream and Thicken:
- In a small bowl, whisk together the cornstarch and water to create a slurry. Stir the slurry into the soup to thicken it slightly.
- Pour in the heavy cream and stir well. Let the soup cook on HIGH for an additional 10-15 minutes to heat through and thicken further.
Serve and Enjoy:
- Ladle the soup into bowls and garnish with fresh parsley if desired. Serve with crusty bread or crackers for a complete, comforting meal.
