Layers of eggs, sausage (or a plant-based alternative), black beans, bell peppers, onions, and cheese are baked to perfection for a breakfast that’s as easy to prepare as it is delicious. Perfect for feeding a crowd or prepping for busy mornings, this casserole can be assembled ahead of time and baked when ready. Serve with salsa, avocado, or sour cream for an extra burst of flavor.

Ingredients

Scale

For the Casserole:

  • 12 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lb breakfast sausage (pork, turkey, or plant-based), cooked and crumbled
  • 1 cup black beans, rinsed and drained
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cups shredded cheddar cheese (divided)
  • Optional: 1 jalapeño, seeded and minced (for heat)

For Topping and Serving:

  • 1 cup shredded cheddar cheese (for topping)
  • Fresh cilantro, chopped (optional garnish)
  • Salsa, sliced avocado, or sour cream (for serving)

Instructions

Step 1: Preheat and Prepare

  1. Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Vegetables and Sausage

  1. Sauté the vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion, bell pepper, and optional jalapeño for 5-6 minutes until softened. Add the cooked sausage and black beans, stirring to combine. Remove from heat.

Step 3: Prepare the Egg Mixture

  1. Whisk the eggs: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until smooth.

Step 4: Assemble the Casserole

  1. Layer the ingredients: Spread half of the cooked sausage and vegetable mixture evenly across the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheddar cheese over the top. Pour half of the egg mixture evenly over the cheese layer. Repeat the layers with the remaining sausage mixture, cheese, and egg mixture.

Step 5: Bake

  1. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown. To test for doneness, insert a knife into the center—it should come out clean.

Step 6: Finish and Serve

  1. Add final touches: Sprinkle the remaining 1 cup of shredded cheddar cheese over the top during the last 5 minutes of baking to melt. Garnish with fresh cilantro if desired.
  2. Serve: Slice the casserole into squares and serve warm with salsa, sliced avocado, or sour cream on the side.
