Ingredients
Scale
- For the Bars:
- 2 large ripe bananas, mashed
- 1 cup creamy almond butter (or peanut butter)
- 1/4 cup pure maple syrup (optional, for extra sweetness)
- 1 teaspoon vanilla extract
- 2 cups old-fashioned rolled oats (gluten-free if needed)
- 1/2 cup almond flour (or oat flour for nut-free option)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips or cacao nibs
Instructions
Prepare the Base:
- In a large mixing bowl, combine the mashed bananas, almond butter, maple syrup (if using), and vanilla extract. Stir until smooth and well combined.
Add Dry Ingredients:
- Add the rolled oats, almond flour, cinnamon, and salt to the wet mixture. Mix thoroughly until the dough comes together and all ingredients are evenly distributed. Fold in the dark chocolate chips or cacao nibs.
Press into Pan:
- Line an 8×8-inch square baking pan with parchment paper, leaving some overhang for easy removal. Transfer the dough to the pan and press it down firmly and evenly using your hands or the back of a spoon.
Chill:
- Place the pan in the refrigerator for at least 1–2 hours, or until the bars are firm and set.
Slice and Serve:
- Once firm, lift the bars out of the pan using the parchment paper. Cut into squares or rectangles of your desired size. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer storage.
