Ingredients

Scale

For the Soup:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans or chickpeas, drained and rinsed
  • 6 cups vegetable broth (or chicken broth for added richness)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: ½ teaspoon red pepper flakes (for a hint of heat)

For Garnish:

  • Fresh parsley, chopped
  • Grated Parmesan cheese
  • Lemon wedges

Instructions

1. Sauté the Aromatics:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.

2. Add the Vegetables and Broth:

  1. Add the sliced carrots, celery, zucchini, and green beans to the pot. Cook for 5 minutes, stirring occasionally, to slightly soften the vegetables.
  2. Pour in the diced tomatoes, kidney beans (or chickpeas), and vegetable broth. Stir in the thyme, oregano, bay leaf, salt, pepper, and optional red pepper flakes.

3. Simmer the Soup:

  1. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.

4. Adjust Seasoning:

  1. Taste the soup and adjust the seasoning with additional salt, pepper, or herbs if needed. Remove the bay leaf before serving.

5. Serve and Garnish:

  1. Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese if desired. Serve with lemon wedges on the side for a bright, citrusy finish.
  2. Enjoy this healthy, hearty vegetable soup as a light meal or pair it with crusty bread for a more filling dish.
