Ingredients
For the Taco Cups:
- 24 small wonton wrappers
- 1 lb ground beef (or turkey/chicken for a lighter option)
- 1 packet taco seasoning (or homemade blend: chili powder, cumin, garlic powder, salt, pepper)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1 tablespoon olive oil (for brushing wontons)
For Toppings:
- ½ cup diced tomatoes
- ¼ cup diced avocado or guacamole
- 2 tablespoons chopped green onions
- Fresh cilantro leaves (optional, for garnish)
- Ranch dressing (for drizzling)
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or line it with cupcake liners.
2. Prepare the Wonton Cups:
- Press one wonton wrapper into each muffin tin cavity, gently shaping it to form a cup. Lightly brush the edges of each wonton wrapper with olive oil to help them crisp up while baking.
- Bake the empty wonton cups for 5-7 minutes, or until they begin to turn golden brown. Remove from the oven and set aside.
3. Cook the Taco Filling:
- In a skillet over medium heat, cook the ground beef until browned and fully cooked through (about 6-8 minutes). Drain excess fat if needed.
- Stir in the taco seasoning and ¼ cup water (or follow package instructions). Simmer for 2-3 minutes until the mixture thickens. Remove from heat.
4. Assemble the Taco Cups:
- Spoon a small amount of the taco meat into each baked wonton cup, filling about halfway. Top each cup with a sprinkle of shredded cheddar cheese.
- Return the filled cups to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve:
- Remove the taco cups from the muffin tin and arrange them on a serving platter. Top with diced tomatoes, avocado, green onions, and cilantro. Drizzle ranch dressing over the top for added creaminess.
- Serve warm with extra ranch or salsa on the side for dipping.
