Ingredients
For the Casserole:
- 1 tablespoon olive oil
- 1 lb ground beef, turkey, or plant-based crumbles
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade blend below)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels (or canned corn, drained)
- 1 cup enchilada sauce (divided)
- 6 small flour or corn tortillas, cut into strips or quarters
- 2 cups shredded Mexican cheese blend (divided)
Optional Homemade Taco Seasoning Blend:
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ teaspoon red pepper flakes (optional, for heat)
- ½ teaspoon salt
For Topping:
- Fresh cilantro, chopped
- Diced avocado or guacamole
- Sour cream or Greek yogurt
- Sliced green onions
- Lime wedges (for serving)
Instructions
Prepare the Filling:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the ground beef (or substitute) to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
- Stir in the taco seasoning, black beans, corn, and ½ cup of enchilada sauce. Cook for 2-3 minutes to combine flavors. Remove from heat.
Assemble the Casserole:
5. Spread ¼ cup of enchilada sauce evenly on the bottom of the prepared baking dish. Layer half of the tortilla strips over the sauce.
6. Spoon half of the beef mixture over the tortillas, followed by 1 cup of shredded cheese. Repeat the layers: tortilla strips, remaining beef mixture, and another 1 cup of cheese.
7. Pour the remaining ½ cup of enchilada sauce over the top layer and sprinkle with the remaining cheese.
Bake Until Golden and Bubbly:
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.
Serve and Enjoy:
9. Let the casserole cool for 5 minutes before serving. Garnish with fresh cilantro, diced avocado, sour cream, green onions, and lime wedges. Serve with extra salsa or hot sauce on the side for added flavor.
