Ingredients

Scale

For the Beef:

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

For the Batter:

  • ½ cup cornstarch
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup water (adjust for consistency)
  • Vegetable oil (for frying)

For the Sauce:

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red chili, sliced (adjust to taste)
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • ½ cup water or chicken broth
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry for thickening)

For Garnish:

  • Sliced green onions
  • Sesame seeds

Instructions

1. Marinate the Beef:

  1. In a bowl, combine the sliced beef with soy sauce, Shaoxing wine, cornstarch, salt, and pepper. Mix well and let it marinate for 15-20 minutes.

2. Prepare the Batter:

  1. In a separate bowl, whisk together the cornstarch, flour, baking powder, salt, and water until smooth. The batter should be thick but pourable; adjust with more water if needed.

3. Fry the Beef:

  1. Heat vegetable oil in a deep skillet or wok over medium-high heat. Coat each piece of marinated beef in the batter and fry in batches until golden brown and crispy (about 2-3 minutes per batch). Remove and drain on paper towels.

4. Make the Sauce:

  1. In the same skillet, reduce the heat to medium. Add 2 tablespoons of oil, minced garlic, grated ginger, and sliced chili. Sauté for 1-2 minutes until fragrant.
  2. Stir in the soy sauce, hoisin sauce, brown sugar, rice vinegar, and water or broth. Bring to a simmer.
  3. Add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and becomes glossy.

5. Combine and Serve:

  1. Toss the fried beef into the sauce, ensuring each piece is evenly coated. Cook for 1-2 minutes to heat through.
  2. Transfer to a serving plate and garnish with sliced green onions and sesame seeds.

6. Enjoy:

  1. Serve hot with steamed rice or noodles for a complete, restaurant-quality meal.
