Ingredients
2 cups cooked macaroni (about 1 cup uncooked)
1 ½ cups shredded cheddar cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon paprika
Salt and pepper to taste
1 cup all-purpose flour (for coating)
2 large eggs, beaten (for coating)
1 ½ cups breadcrumbs (for coating)
Oil for frying (vegetable or canola oil)
Instructions
- Prepare the Mac and Cheese:
- In a saucepan, melt the butter over medium heat. Add the flour and whisk until smooth to create a roux.
- Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens.
- Stir in the cheddar, mozzarella, and Parmesan cheeses until melted and smooth. Add garlic powder, paprika, salt, and pepper.
- Fold in the cooked macaroni until well coated. Remove from heat and let the mixture cool completely.
- Form the Balls:
- Once cooled, scoop out tablespoon-sized portions of the mac and cheese mixture. Roll them into balls using your hands.
- Place the balls on a baking sheet lined with parchment paper and freeze for at least 1 hour (or until firm).
- Coat the Balls:
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Roll each mac and cheese ball in flour, dip it in the egg, and then coat it thoroughly with breadcrumbs. Repeat for all balls.
- Fry the Balls:
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry the balls in batches for 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pot.
- Remove with a slotted spoon and drain on paper towels.
- Serve:
- Serve warm with your favorite dipping sauce. Enjoy!
