Ingredients

For the Muffins:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk (room temperature)
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Filling:

  • ¾ cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 3 tablespoons unsalted butter, melted (for drizzling)

For the Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tablespoons milk (or enough to achieve desired consistency)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  3. Combine Wet Ingredients:
    • In another bowl, mix the melted butter, egg, milk, and vanilla extract until well combined.
  4. Combine Mixtures:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are some lumps.
  5. Prepare the Cinnamon Sugar Filling:
    • In a small bowl, mix together the brown sugar and ground cinnamon.
  6. Fill Muffin Tins:
    • Divide half of the muffin batter evenly among the muffin cups (about 1 tablespoon in each). Sprinkle about 1 tablespoon of the cinnamon sugar mixture on top of this layer. Drizzle with melted butter for added richness.
    • Top with the remaining muffin batter, filling each cup about ¾ full. Finish by sprinkling the remaining cinnamon sugar mixture on top.
  7. Bake:
    • Bake in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
  8. Prepare the Glaze:
    • While the muffins are baking, mix together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust milk as needed to reach your desired consistency.
  9. Cool and Serve:
    • Allow muffins to cool in the pan for about 5 minutes before transferring to a wire rack. Drizzle with glaze before serving.
