Ingredients
For the Muffins:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup granulated sugar
- ¼ cup unsalted butter, melted
- 1 large egg
- 1 cup milk (room temperature)
- 1 teaspoon vanilla extract
For the Cinnamon Sugar Filling:
- ¾ cup brown sugar, packed
- 2 tablespoons ground cinnamon
- 3 tablespoons unsalted butter, melted (for drizzling)
For the Glaze (Optional):
- 1 cup powdered sugar
- 2 tablespoons milk (or enough to achieve desired consistency)
- ½ teaspoon vanilla extract
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- Combine Wet Ingredients:
- In another bowl, mix the melted butter, egg, milk, and vanilla extract until well combined.
- Combine Mixtures:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are some lumps.
- Prepare the Cinnamon Sugar Filling:
- In a small bowl, mix together the brown sugar and ground cinnamon.
- Fill Muffin Tins:
- Divide half of the muffin batter evenly among the muffin cups (about 1 tablespoon in each). Sprinkle about 1 tablespoon of the cinnamon sugar mixture on top of this layer. Drizzle with melted butter for added richness.
- Top with the remaining muffin batter, filling each cup about ¾ full. Finish by sprinkling the remaining cinnamon sugar mixture on top.
- Bake:
- Bake in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
- Prepare the Glaze:
- While the muffins are baking, mix together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust milk as needed to reach your desired consistency.
- Cool and Serve:
- Allow muffins to cool in the pan for about 5 minutes before transferring to a wire rack. Drizzle with glaze before serving.
