Instructions

1. Preheat the Oven:

  1. Preheat your oven to 400°F (200°C).

2. Prepare the Chicken and Potatoes:

  1. Pat the chicken thighs dry with paper towels and season generously with salt, pepper, garlic powder, paprika, and thyme on both sides.
  2. Toss the halved potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a large baking sheet or in a roasting pan.

3. Sear the Chicken:

  1. Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5-6 minutes until golden brown and crispy. Flip and sear the other side for 2-3 minutes. Remove from the skillet and place the chicken on top of the potatoes in the baking dish.
