Ingredients

Scale

For the Taco Cups:

  • 24 small wonton wrappers
  • 1 lb ground beef (or turkey/chicken for a lighter option)
  • 1 packet taco seasoning (or homemade blend: chili powder, cumin, garlic powder, salt, pepper)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 tablespoon olive oil (for brushing wontons)

For Toppings:

  • ½ cup diced tomatoes
  • ¼ cup diced avocado or guacamole
  • 2 tablespoons chopped green onions
  • Fresh cilantro leaves (optional, for garnish)
  • Ranch dressing (for drizzling)

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or line it with cupcake liners.

2. Prepare the Wonton Cups:

  1. Press one wonton wrapper into each muffin tin cavity, gently shaping it to form a cup. Lightly brush the edges of each wonton wrapper with olive oil to help them crisp up while baking.
  2. Bake the empty wonton cups for 5-7 minutes, or until they begin to turn golden brown. Remove from the oven and set aside.

3. Cook the Taco Filling:

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked through (about 6-8 minutes). Drain excess fat if needed.
  2. Stir in the taco seasoning and ¼ cup water (or follow package instructions). Simmer for 2-3 minutes until the mixture thickens. Remove from heat.

4. Assemble the Taco Cups:

  1. Spoon a small amount of the taco meat into each baked wonton cup, filling about halfway. Top each cup with a sprinkle of shredded cheddar cheese.
  2. Return the filled cups to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

5. Garnish and Serve:

  1. Remove the taco cups from the muffin tin and arrange them on a serving platter. Top with diced tomatoes, avocado, green onions, and cilantro. Drizzle ranch dressing over the top for added creaminess.
  2. Serve warm with extra ranch or salsa on the side for dipping.
